Fancy Toast – beetroot, goat cheese & hazelnuts

Is there anything better than toast? What about “fancy toast”? A slice of crispy bread topped with an epic selection of ingredients just waiting to be demolished!! My fancy beetroot toast is perfect for lunch, in smaller versions as a snack or canape and all the ingredients you can grab at your local grocery store too 😉

Aside from looking great, this fancy toast is delicious too! It’s a great and healthy lunchtime snack, perfect on smaller pieces of bread as a canape for dinner parties or even try it as a breakfast dish. Imagine a soft boiled egg, or maybe a poached one with a couple slices of bacon 😉

All the ingredients are easy to get hold of and nowadays you can get cooked beets in the store it literally takes minutes to whip this up.

Beetroot Hummus

If you only make one thing from this fancy toast recipe then let it be my delicious beetroot hummus. So simple to make, great as a dip, spread on toast or even used alongside a protein. The fact it only takes about 5 minutes to make too is, well a serious game changer 😉

To make this element all you need are the following ingredients

  • cooked beets
  • lemon juice
  • cumin
  • cayenne pepper
  • tahini
  • garlic
  • salt
  • olive oil

Literally, pop them all into a food processor and whiz them up for 30 seconds to a minute! Store the beetroot hummus in the fridge ready to use and it will keep for up to 3-4 days. Could it be any easier? All you need to do is grill up some bread and you are nearly ready for some fancy toast!

Whipped Goat Cheese

Do you ever go to a fancy restaurant and see “whipped goat cheese” or “whipped feta” and think now that sounds expensive? Well, guess what? It’s bloody simple to make and yes, it does make your toast seem a little fancier 😉

To do so all you need is the following

  • goat cheese
  • cream
  • lemon juice or zest

That’s it! Oh, and a little food processor will make the job much easier too. Simply, add the ingredients to the food processor and whip them up. You can add herbs or spices to them too but I like to let the goat cheese do the talking here. Especially considering we have such beautiful flavours coming from the beetroot hummus.

Whipped goat cheese will firm up in the fridge as it cools so best to either make before serving or take it from the fridge a few mins prior to serving it making it in advance.

Toasted Hazelnuts

Hazelnuts are the fruit from the hazel tree. You may recognize them or know them from shows with squirrels filling their mouths with them 😉

They are high in calories but contain plenty of good fats and nutrients too. They can be eaten raw but once toasted they have a richer flavour, will often taste nuttier and are typically crunchier too.

To do so either roast in the oven or in a dry frying pan. Nuts will burn in an instant so best to keep an eye on them. Once toasted, wrap in a dry (and clean) dish cloth and rub together vigorously. This helps remove the skin from the nuts with ease.

Once cooled, chop them up and store in an airtight container. Now, who is ready for fancy toast?

Beetroot “fancy toast” with Goat Cheese & Hazelnuts

Ingredients 

Beetroot Hummus

  • 500 g cooked beets
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 1 pinch cayenne pepper
  • 1 tsp cumin
  • 1 tbsp tahini
  • 2 tbsp olive oil
  • 1 pinch salt

Whipped Goat Cheese

  • 150 g goat cheese
  • 1 tbsp lemon juice
  • 4 tbsp cream

Other

  • 8 slices crusty bread
  • olive oil
  • 50 g hazelnuts
  • dill

Instructions

Hazelnuts

  • Place hazelnuts into a frying pan on medium heat

  • Heat for 3-4 minutes, moving the hazelnuts regularly

  • Place hazelnuts in a tea towel and rub together – this removes the skin easily

  • Roughly chop

Serving

  • Drizzle the bread in olive oil and grill

  • Top with beetroot mixture

  • Pipe or spoon some goat cheese on top and sprinkle hazelnuts & dill over

  • You can also use a baguette to make them into crostini’s/canapes for a dinner party

Notes

Tips/Tricks

  • every component (EXCEPT the freshly grilled bread) can be made in advance. The cheese will harden in the fridge so remove about 5-10 minutes prior to serving
  • if making crostini to serve as a canape you can make them in advance and store in an airtight container making this a simple dinner party snack to serve!
  • the beet hummus will keep for up to 4 days in the fridge
